Apple Pancakes
3 apples, peeled, cored and finely shredded
¼ cup fresh lemon juice
1 cup sifted flour
½ tsp. salt
1 ½ tsp. baking powder
3T brown sugar
powdered sugar with cinnamon
1 cup sour cream or plain yogurt
4 egg yolks
milk
4 egg whites, beaten
butter
Shred the apples into a plastic container or bowl with an airtight lid so they won’t darken, and marinate them an hour sprinkled with juice. Sift the flour with the dry ingredients, and combine with the sour cream mixed with the egg yolks. If necessary add a little milk to make a medium thick batter; add the apples and marinade. Fold in the stiffly beaten egg whites. Fry the cakes, small or large, in butter. Sprinkle the top with a mixture of powdered sugar/ cinnamon. Serves 4.
Applesauce Muffins
1 cup butter
2 cups sugar
2 eggs beaten
2 cups warm applesauce
2 T vanilla
2 t. soda
4 cups. flour
1 T allspice
Cream butter and sugar. Mix together the eggs, applesauce and vanilla. Add this mixture to the butter/sugar alternately with the dry ingredients. Bake 350 for 15-20 minutes.
Bence Apple Country Bread
2 cups peeled and chopped apples
1 cup sugar
½ cup shortening
2 eggs
1 tsp vanilla
2 cups flour
1 tsp baking powder
1 tsp. baking soda
½ tsp. salt
½ cup chopped nuts (optional)
Topping: 1 TB sugar mixed with ¼ tsp cinnamon
Heat oven to 350 Grease and flour 9x5x3 pan
Mix together the sugar, shortening, eggs and vanilla.
Stir in flour, baking powder, baking soda, salt
Stir in apples and nuts
Spread in pan and sprinkle the topping over the batter
Bake 50-60 minutes until toothpick inserted in center comes out clean
Immediately remove from pan and put on cake rack to cool completely before slicing.
Apple Sheet Pie
Crust: 2 cups flour
1 cup Crisco
1 tsp. salt
¼ cup milk
Filling: 10-15 apples, sliced and peeled
1 cup sugar
2 tsp. cinnamon
1 tsp. nutmeg
Topping: 1 cup sugar
2/3 cup butter
1 ½ cups flour
Mix ingredients for crust. Press into 13 x 9 inch pan.
Mix ingredients for topping together with fork until crumbly
Mix filling ingredients together and spread over crust
Crumble topping over the apple mixture
Bake 325 for 1 hour 20 minutes
Serve with ice cream or cheddar cheese
